Ingredients
Step 1 — Mashed potatoes (Erde)
- 2 lbs Yukon Gold potatoes (peeled, cubed)
- 4 tbsp butter
- ½ cup warm milk
- Salt and nutmeg
Step 2 — Applesauce (Himmel)
- 3 large apples (peeled, cored, chopped)
- 2 tbsp butter
- 1 tbsp sugar
- Pinch of cinnamon
- 1 tbsp lemon juice
Step 3 — Blood sausage and onions
- 4 slices Blutwurst (blood sausage)
- 2 large onions (thinly sliced)
- 2 tbsp butter
- Salt and pepper

Prepare potatoes and apples
Boil potatoes until tender, mash with butter and milk. Season with salt and nutmeg. Simmer apples with butter, sugar, cinnamon, and lemon until soft; mash to a coarse applesauce.

Fry sausage and onions
Caramelize onions in butter over medium-low heat 15 minutes. Pan-fry blood sausage slices 3–4 minutes per side until crisp outside.

Plate and serve
Layer mashed potatoes and applesauce on each plate. Top with caramelized onions and blood sausage. Serve immediately.
