Step 1 — Cook the chicken filling
- 1 lb chicken breast (diced small)
- 1 tbsp olive oil
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp garlic powder
- ½ tsp salt
- ½ cup bell pepper (diced)
- ¼ cup onion (diced)
Step 2 — Assemble and cook
- 4 large flour tortillas (10-inch)
- 2 cups shredded Mexican blend cheese
- Cooking spray or butter
- Sour cream (to serve)
- Salsa (to serve)
- Guacamole (to serve)

Cook the chicken filling
Heat olive oil in a skillet over medium-high heat. Season diced chicken with cumin, chili powder, garlic powder, and salt. Cook 5-6 minutes until cooked through. Add bell pepper and onion and cook 2 more minutes. Remove from pan.

Assemble and cook quesadillas
Heat a large skillet or griddle over medium heat. Spray with cooking spray. Place a tortilla in the pan. Sprinkle ½ cup cheese on one half, top with chicken filling, then more cheese. Fold in half. Cook 2-3 minutes per side until golden and crispy. Slice into wedges and serve with sour cream, salsa, and guacamole.
