A healthier chicken and rice casserole with Greek yogurt instead of cream soup, loaded with broccoli and cheddar. One dish, big flavor, less guilt.

Ingredients
Step 1 — Make the sauce
- 1 cup plain Greek yogurt
- ½ cup low-sodium chicken broth
- 1 cup shredded sharp cheddar
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Step 2 — Assemble
- 1½ cups long-grain white rice (uncooked)
- 3 cups broccoli florets
- 1.5 lbs boneless chicken breasts (cubed)
- ½ tsp paprika
- Fresh parsley

Make the sauce
Preheat oven to 375°F. Grease a 9x13 baking dish. Whisk together Greek yogurt, broth, half the cheddar, onion powder, garlic powder, salt, and pepper until smooth.

Assemble
Spread uncooked rice in the dish. Top with broccoli and chicken. Season chicken with paprika, salt, and pepper. Pour sauce evenly over everything and stir gently to combine. Cover tightly with foil.

Bake covered 40 minutes. Uncover, sprinkle with remaining cheddar, and bake 10 more minutes until rice is tender and chicken reaches 165°F. Rest 5 minutes. Garnish with parsley.
