Vietnamese Grilled Pork Chops
Caramelized Vietnamese pork chops marinated in fish sauce, oyster sauce, brown sugar, and garlic. Grill until charred and glossy — serve over rice with nuoc cham for an easy weeknight dinner.

Ingredients
Step 1 — Make the marinade
- 3 tbsp fish sauce
- 2 tbsp oyster sauce
- 3 tbsp brown sugar
- 4 garlic cloves (minced)
- 1 tbsp lemongrass (minced, optional)
- 4 green onions (chopped)
- 1 tbsp vegetable oil
- ½ tsp black pepper
Step 2 — Marinate and grill
- 4 bone-in pork chops (about 1 inch thick)
Step 3 — Serve
- Steamed jasmine rice
- Pickled daikon and carrot
- Cucumber slices
- Fish sauce dressing (nuoc cham)
- Scallion oil (optional)

Mix the marinade
In a large bowl, combine fish sauce, oyster sauce, brown sugar, garlic, lemongrass, green onions, oil, and pepper. Stir until the sugar dissolves into a glossy marinade.

Marinate the pork chops
Add pork chops and turn to coat every surface. Marinate at least 1 hour at room temperature, or up to overnight in the refrigerator. Bring to room temperature before grilling.

Grill until caramelized
Heat a grill or ridged grill pan over medium-high heat. Shake excess marinade off the chops and grill 5–6 minutes per side until deeply charred, sticky, and cooked to 145°F. Rest 5 minutes before serving.

Serve
Slice chops if desired and serve over jasmine rice with pickled vegetables, cucumber, and nuoc cham. Drizzle with scallion oil for extra flavor.
