Ingredients
Step 1 — Cook the pasta
- 12 oz penne
- Salted water (for boiling)
Step 2 — Make the vodka sauce
- 2 tbsp olive oil
- 3 garlic cloves (minced)
- 1 can (14 oz) crushed tomatoes
- ⅓ cup vodka
- ½ cup heavy cream
- ½ tsp red pepper flakes
- 1 tsp salt
- ½ cup Parmesan (grated)
- Fresh basil

Cook the pasta
Boil penne in salted water until al dente. Reserve ½ cup pasta water, then drain.

Make the vodka sauce
Sauté garlic in olive oil 1 minute. Add tomatoes and simmer 5 minutes. Stir in vodka and simmer 3 minutes. Reduce heat, whisk in cream, salt, and pepper flakes. Toss pasta with sauce and Parmesan, adding pasta water to loosen. Top with basil.
