Creamy Tuscan Chicken

Ingredients
Step 1 — Sear the chicken
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- ½ tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Step 2 — Make the Tuscan cream sauce
- 3 tbsp butter
- 5 garlic cloves (minced)
- ½ cup sun-dried tomatoes (drained, chopped)
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups baby spinach
- ½ cup Parmesan cheese (grated)
- 1 tsp Italian seasoning
- Salt and pepper to taste

Sear the chicken
Season chicken with Italian seasoning, garlic powder, salt, and pepper. Heat oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and cooked through. Remove and set aside.

Make the Tuscan cream sauce
In the same pan, melt butter over medium heat. Add garlic and cook 1 minute. Add sun-dried tomatoes and cook 2 minutes. Pour in chicken broth and scrape up any browned bits. Add heavy cream and Italian seasoning. Simmer 4-5 minutes until slightly thickened. Stir in spinach until wilted. Add Parmesan and stir until melted. Return chicken to pan and coat in sauce. Serve immediately.
