Ingredients
Step 1 — Make the batter
- 2 ripe bananas
- 2 large eggs
- ½ cup rolled oats
- Pinch of salt
- Optional add-ins: 1 tsp vanilla, ½ tsp cinnamon, ¼ cup blueberries
Step 2 — Cook
- Coconut oil or butter (for pan)
- Maple syrup (to serve)
- Fresh fruit (to serve)

Make the batter
Mash bananas in a bowl until smooth (a few lumps are fine). Whisk in eggs. Stir in oats, salt, and any optional add-ins. The batter will be thick. Let it rest 2 minutes.

Cook the pancakes
Heat a non-stick pan over medium heat and melt a small amount of coconut oil or butter. Drop ¼ cup batter per pancake. Cook 2-3 minutes until edges look set and bubbles form. Flip carefully and cook 1-2 more minutes. These are more delicate than regular pancakes. Serve with maple syrup and fresh fruit.
