Ingredients
Step 1 — Make the custard
- 2 large eggs
- ½ tsp cinnamon
- 2 tbsp sugar
- ⅛ cup heavy cream
- ⅛ cup milk
- ½ tsp vanilla extract
- ¼ tsp salt
Step 2 — Cook and serve
- 4–6 slices thick bread (brioche or challah)
- 2 tbsp butter (for the pan)
- Maple syrup (to serve)
- Powdered sugar (optional)

Make the custard
Whisk eggs, cinnamon, sugar, heavy cream, milk, vanilla, and salt in a shallow dish until smooth and the sugar dissolves.

Soak the bread
Heat a large skillet or griddle over medium heat. Dip each bread slice in the custard, letting it soak 15–20 seconds per side — don't oversaturate or the toast will fall apart.

Cook until golden
Melt 1 tbsp butter in the pan. Cook soaked bread 2–3 minutes per side until deep golden brown and set in the center. Work in batches, adding more butter as needed. Keep finished slices warm in a 200°F oven while you cook the rest.

Serve immediately with maple syrup and a dusting of powdered sugar if desired.
