Black Bean Soup

Ingredients
Step 1 — Build the soup base
- 2 tbsp olive oil
- 1 medium onion (diced)
- 4 garlic cloves (minced)
- 1 jalapeño (seeded, diced)
- 2 tsp cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- ½ tsp chili powder
- 1 tsp salt
Step 2 — Simmer with beans
- 3 cans (15 oz each) black beans (drained, rinsed)
- 3 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tbsp lime juice
Step 3 — Toppings
- Sour cream or coconut cream
- Avocado slices
- Fresh cilantro
- Lime wedges

Build the soup base
Heat olive oil in a large pot over medium heat. Cook onion 4 minutes until soft. Add garlic and jalapeño, cook 1 minute. Stir in cumin, paprika, oregano, chili powder, and salt. Cook 1 minute until fragrant.

Simmer with beans
Add beans, broth, and tomatoes. Bring to a boil, then reduce heat and simmer 20 minutes. Use an immersion blender to partially blend the soup for a creamy texture with some whole beans remaining. Stir in lime juice.

Ladle into bowls and top with sour cream, avocado, cilantro, and lime.
