One Pot Pasta
The magic one pot pasta method — pasta, vegetables, and sauce all cook together in one pot for a creamy, starchy sauce that coats every noodle. Done in 20 minutes.

Ingredients
Step 1 — Everything in the pot
- 12 oz linguine or spaghetti
- 1 can (14 oz) diced tomatoes
- 4 garlic cloves (minced)
- 1 medium onion (thinly sliced)
- 1 cup cherry tomatoes (halved)
- 2 cups baby spinach
- 3½ cups vegetable or chicken broth
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- 1 tsp salt
- ½ tsp black pepper

- ½ cup Parmesan cheese (grated)
- Fresh basil

Everything in the pot
Place pasta, diced tomatoes, cherry tomatoes, garlic, onion, spinach, broth, olive oil, Italian seasoning, red pepper flakes, salt, and pepper in a large pot. Bring to a boil over high heat, stirring frequently. Cook 9-10 minutes, continuing to stir, until pasta is al dente and most of the liquid has been absorbed and forms a sauce.

Finish and serve
Remove from heat. Stir in Parmesan. The starchy liquid will thicken into a silky sauce. Taste and adjust seasoning. Top with fresh basil and more Parmesan.
