Slow Cooker Low-Sodium Pulled Pork
Fork-tender pulled pork with a low-sodium spice rub and no-salt-added tomatoes. Set it in the morning and serve tacos or sandwiches for family dinner.

Ingredients
Step 1 — Rub the pork
- 3 lb pork shoulder (trimmed)
- 1 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp black pepper
- ¼ tsp cayenne (optional)
Step 2 — Slow cook
- 1 cup low-sodium chicken broth
- 1 can (14 oz) crushed tomatoes (no salt added)
- 1 onion (sliced)
- 2 garlic cloves (smashed)
Step 3 — Serve
- Brioche buns or corn tortillas
- Coleslaw
- Lime wedges

Rub the pork
Mix rub ingredients and coat pork on all sides. Place onion and garlic in the slow cooker; set pork on top.

Slow cook
Pour broth and tomatoes around the pork. Cover and cook on LOW 8 hours (or HIGH 4–5 hours) until meat shreds easily with forks.

Shred and serve
Remove pork, shred, and toss with cooking juices. Skim fat if desired. Serve on buns or tortillas with coleslaw and lime.
