Beef Stuffed Bell Peppers

Ingredients
Step 1 — Prep the peppers
- 4 large bell peppers (any color)
- 1 tbsp olive oil
- Salt
Step 2 — Make the filling
- 1 lb ground beef
- 1 small onion (diced)
- 3 garlic cloves (minced)
- 1 cup cooked white rice
- 1 can (14 oz) diced tomatoes
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
Step 3 — Stuff and bake
- 1.5 cups shredded mozzarella or cheddar cheese

Prep the peppers
Preheat oven to 375°F. Cut tops off peppers and remove seeds and membranes. Brush the outside with olive oil and season inside with salt. Place in a baking dish.

Make the filling
Cook ground beef and onion in a skillet over medium-high heat until browned. Drain fat. Add garlic and cook 1 minute. Stir in cooked rice, diced tomatoes, Worcestershire, Italian seasoning, salt, and pepper. Simmer 5 minutes.

Stuff and bake
Fill each pepper generously with the beef mixture, mounding it slightly. Top with shredded cheese. Add ¼ cup water to the bottom of the baking dish. Cover with foil and bake 30 minutes. Uncover and bake 5-10 more minutes until cheese is bubbly.
