Slow Cooker Beef Stew
Rich, hearty beef stew with tender chunks of beef, potatoes, and carrots in a deeply flavored broth. The slow cooker does all the work — this is the definition of comfort food.

Ingredients
Step 1 — Brown the beef
- 2 lbs beef stew meat (cut into 1-inch cubes)
- 2 tbsp all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
Step 2 — Build the stew
- 1 medium onion (diced)
- 4 garlic cloves (minced)
- 1 lb baby potatoes (halved)
- 3 carrots (cut into chunks)
- 2 celery stalks (sliced)
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- 2 bay leaves

Brown the beef
Toss beef cubes with flour, salt, and pepper. Heat oil in a large skillet over high heat. Brown beef on all sides in batches, 2-3 minutes per side. Do not crowd the pan. Transfer to the slow cooker.

Build the stew
Add all remaining ingredients to the slow cooker. Stir to combine. Cook on LOW 8-10 hours or HIGH 5-6 hours until beef is very tender. Remove bay leaves. Taste and adjust seasoning. For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp cold water and stir in during the last 30 minutes.
