Breakfast Burritos
Hearty breakfast burritos loaded with scrambled eggs, cheese, and sausage. Make a batch and freeze them.

Ingredients
Step 1 — Cook the filling
- 6 large eggs
- ¼ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- ½ lb breakfast sausage (crumbled)
- ½ cup bell pepper (diced)
- ¼ cup onion (diced)
Step 2 — Assemble burritos
- 4 large flour tortillas (10-inch)
- ½ cup shredded cheddar cheese
- ¼ cup salsa
- ¼ cup sour cream

Cook the filling
Cook sausage in a skillet over medium heat until browned. Add pepper and onion and cook 3 minutes. Whisk eggs with milk, salt, and pepper, then pour into the skillet. Scramble eggs until just set. Remove from heat.

Assemble burritos
Warm tortillas. Place egg and sausage mixture in the center of each tortilla. Top with cheese, salsa, and sour cream. Fold sides in and roll tightly. Serve immediately, or wrap in foil and freeze for later.
