Pasta with Italian Sausage and Peppers
Rustic Italian sausage and pepper pasta with a simple tomato sauce. Full of bold flavors — done in 30 minutes and makes amazing leftovers.

Ingredients
Step 1 — Cook the pasta
- 12 oz rigatoni or penne
- Salted water (for boiling)
Step 2 — Cook sausage and peppers
- 1 lb Italian sausage (removed from casing)
- 2 bell peppers (any color, sliced)
- 1 medium onion (sliced)
- 4 garlic cloves (minced)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
Step 3 — Finish the sauce
- 1 can (28 oz) crushed tomatoes
- ½ cup reserved pasta water
- Salt and pepper
- Fresh basil
- Parmesan cheese

Cook the pasta
Cook pasta in salted boiling water according to package directions. Reserve 1 cup pasta water before draining.

Cook sausage and peppers
Heat oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up, until browned. Add peppers and onion. Cook 5 minutes until softened. Add garlic, Italian seasoning, and red pepper flakes. Cook 1 minute.

Finish the sauce
Add crushed tomatoes and simmer 10 minutes. Add drained pasta and toss to coat. Add pasta water as needed to loosen the sauce. Season with salt and pepper. Top with fresh basil and Parmesan.
