Ingredients
Step 1 — Make the slaw and sauce
- 2 cups coleslaw mix
- ¼ cup fresh cilantro (chopped)
- Juice of 1 lime
- 1 tbsp olive oil
- Salt to taste
- For chipotle sauce: ½ cup sour cream or Greek yogurt
- 1-2 chipotle peppers in adobo (minced)
- 1 tbsp lime juice
- ½ tsp garlic powder
Step 2 — Cook the shrimp
- 1.5 lbs large shrimp (peeled, deveined)
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt

- 8 small corn or flour tortillas (warmed)

Make the slaw and sauce
Toss coleslaw mix with cilantro, lime juice, olive oil, and salt. Let sit while you cook the shrimp. For chipotle sauce, mix sour cream, minced chipotles, lime juice, and garlic powder. Taste and adjust heat level.

Cook the shrimp
Toss shrimp with olive oil and all the spices. Heat a large skillet over high heat. Add shrimp in a single layer and cook 1-2 minutes per side until pink and slightly charred. Do not overcook.

Warm tortillas. Top each with a spoonful of slaw, several shrimp, and a drizzle of chipotle sauce. Serve with lime wedges and sliced avocado.
