Cauliflower Fried Rice
Low-carb cauliflower fried rice that actually tastes amazing. All the flavor of classic fried rice with a fraction of the carbs — ready in 20 minutes.

Ingredients
Step 1 — Prep the cauliflower rice
- 1 large head cauliflower (or 4 cups pre-riced)
- 1 tbsp vegetable oil
Step 2 — Stir fry
- 2 tbsp vegetable oil
- 1 cup frozen peas and carrots
- 3 garlic cloves (minced)
- 1 tsp fresh ginger (grated)
- 3 green onions (sliced)
- 3 large eggs (beaten)
- 3 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp white pepper

Make cauliflower rice
Cut cauliflower into florets. Pulse in a food processor until it resembles rice, or grate on a box grater. Do not over-process.

Stir fry
Heat 1 tbsp oil in a large wok or skillet over high heat. Add cauliflower rice and cook 3-4 minutes until slightly golden. Push to the side. Add remaining oil, cook frozen vegetables 2 minutes. Add garlic and ginger, cook 30 seconds. Push everything to the side and scramble the eggs. Mix everything together. Add soy sauce, sesame oil, and white pepper. Top with green onions.
