Step 1 — Prep the wings
- 3 lbs chicken wings (split at joint)
- 1 tbsp baking powder (aluminum-free)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
Step 2 — Sauce options
- Buffalo sauce: ¼ cup hot sauce + 3 tbsp butter
- OR Honey garlic: 3 tbsp honey + 2 garlic cloves + 1 tbsp soy sauce

Prep and dry the wings
Pat wings completely dry with paper towels — this is the key to crispiness. Toss wings with baking powder, garlic powder, paprika, salt, and pepper until evenly coated. Arrange on a wire rack over a baking sheet. Refrigerate uncovered 30 minutes if you have time, or proceed immediately.

Bake and sauce
Preheat oven to 425°F. Bake wings 45-50 minutes, flipping halfway, until deeply golden and crispy. While wings bake, make your sauce of choice by whisking ingredients together in a bowl. Toss hot wings in sauce immediately before serving.
