Lemon Herb Baked Chicken Thighs

Ingredients
Step 1 — Make the marinade and coat
- 8 bone-in chicken thighs
- 3 tbsp olive oil
- 4 garlic cloves (minced)
- Zest and juice of 1 lemon
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
Step 2 — Serve
- Fresh thyme sprigs
- Lemon slices
- Roasted vegetables of choice

Marinate and bake
Preheat oven to 425°F. Whisk together olive oil, garlic, lemon zest and juice, thyme, rosemary, paprika, salt, and pepper. Pour over chicken thighs and toss to coat. Arrange skin-side up in a baking dish. Bake 35-40 minutes until skin is golden and crispy and internal temperature reaches 165°F.

Let rest 5 minutes. Serve with pan juices spooned over the top, fresh thyme, and lemon slices.
