White Chicken Chili
Creamy white chicken chili with green chiles, white beans, and a rich broth. A lighter twist on classic chili that still hits all the comfort food notes.

Ingredients
Step 1 — Build the chili base
- 1 tbsp olive oil
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 1 can (4 oz) diced green chiles
- 2 tsp cumin
- 1 tsp oregano
- ½ tsp coriander
- ½ tsp salt
Step 2 — Add protein and beans
- 2 lbs boneless chicken breast
- 3 cans (15 oz each) white cannellini beans (drained)
- 4 cups chicken broth
Step 3 — Finish creamy
- 4 oz cream cheese (cubed)
- ½ cup sour cream
- Juice of 1 lime
Step 4 — Toppings
- Shredded Monterey Jack cheese
- Avocado slices
- Tortilla chips
- Fresh cilantro

Build the chili base
Heat oil in a large pot over medium heat. Cook onion 4 minutes. Add garlic and cook 1 minute. Stir in green chiles, cumin, oregano, coriander, and salt. Cook 1 minute until fragrant.

Add chicken and beans
Add whole chicken breasts, beans, and chicken broth. Bring to a boil, then reduce heat and simmer 20 minutes until chicken is cooked through. Remove chicken and shred. Return to pot.

Finish creamy
Reduce heat to low. Add cream cheese and stir until fully melted. Stir in sour cream and lime juice. Do not boil. Taste and adjust seasoning.

Serve
Ladle into bowls and top with cheese, avocado, tortilla chips, and cilantro.
