Ingredients
Step 1 — Cook the bacon and build the base
- 6 strips bacon (chopped)
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 4 tbsp butter
- ¼ cup all-purpose flour
Step 2 — Make the soup
- 2 lbs russet potatoes (peeled, diced)
- 4 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1 tsp salt
- ½ tsp black pepper
Step 3 — Finish and toppings
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 3 green onions (sliced)
- Extra bacon crumbles

Cook the bacon and build the base
Cook bacon in a large pot over medium heat until crispy. Remove and set aside, leaving 1 tbsp drippings in the pot. Cook onion in drippings 4 minutes. Add butter and garlic, cook 1 minute. Whisk in flour and cook 1 minute.

Make the soup
Add diced potatoes, chicken broth, milk, and cream. Bring to a boil. Reduce heat and simmer 20-25 minutes until potatoes are completely tender. Use a potato masher to mash about half the potatoes for a creamy-chunky texture. Season with salt and pepper.

Finish and serve
Stir in half the cheddar and half the sour cream until melted. Ladle into bowls and top with remaining cheese, sour cream, bacon crumbles, and green onions.
